So as you all know by now, food has played a huge part in my health journey. Years ago I lived off cereal, toast and microwave meals, and in the words of my former flatmate Claire “I couldn’t cook to save my life”. But now it has really has become a passion of mine and I love nothing more than creating something delicious in the kitchen which nine times out of ten is plant-based.
So after several requests, I thought I would share with you some of my favourite recipes that I love to make. Don’t get me wrong, I am not a chef by any means but I love to experiment with recipes and make them my own so I have made a few tweaks here and there.
So here are the recipes that I love to eat and I look forward to your trying them too.
Yellow Peanut Butter Vegetable Curry
Now if you are a fan of peanut butter this delicious curry is for you. Made with mangetout, chickpeas and carrots combined with a tasty yet creamy sauce (which may I just point out is made from almond milk) combined with an array of spices, this amazing curry is without a doubt one of my favourite meals to make. 2. Sweet Potato and Black Bean Shepherd’s Pie
Now if you haven’t heard of Deliciously Ella, she is basically the queen of plant-based cooking and this recipe is such a tasty treat. She puts a really modern twist on the traditional shepherd’s pie by using sweet potato, black beans and a twist of lime. This meal is such a hearty but healthy dinner that I normally team up with some broccoli or any other green veg. Click here to get cooking.
3. Butternut Squash Stew with Kale, Quinoa, Tomatoes & White Beans
This simple and pretty quick recipe is great for those evenings you don’t want too much fuss but at the same time want a good filling meal. This tasty stew is packed with smoked paprika and cumin to give it such a lovely flavour. I love this recipe because it’s actually delicious to eat the next day eat cold and you can even it add it to salads. A great all-around plant-based meal. Click here for the link.
4. Cauliflower Tikka Masala
Now, who doesn’t love a tikka masala? I know I do. Normally they are made with a ton of cream and harmful oils but this tasty, plant-based/vegan recipe is the healthy alternative. I can promise you now that this being made from plant-based ingredients does not mean that you compromise on the taste. As well as the cauliflower I like to add some fresh kale or marrow to this dish as I feel it makes it a more rounded meal. So click here to be transported to India for this delicious curry.
5. Portuguese Pea Stew With A Twist
This hearty dish is another quick and simple dinner that I love to make. Made with potatoes, tomatoes and peas with a twist of whole coriander seeds to give it a punch of flavour, this stew is tantalising on your taste buds.
